Lentils Keufte | Kibbeh

Lentils keufteh or “Vosbov keufteh” is usually made during lent, because it does not contain any meat. It is made with fine bulgur #1 grade, orange lentils, and onions. Lentils in all their varieties are considered a power food because they contain Vitamin B, Vitamin E, helps lower cholesterol, have high soluble fiber, folic acid, and maintains your blood sugar level. Very simple to make yet extremely nutritious.

Ingredients
  1. 1 cup orange lentils
  2. 3 cups water
  3. 1 tsp salt
  4. 1 cup #1 bulgur (fine)
  5. 1 teaspoon cumin
  6. ½ teaspoon red pepper
  7. ½ teaspoon black pepper
  8. ¼ cup butter
  9. 1 onion chopped
  10. 3 tablespoons vegetable oil
Salad and Dressing
  1. 2 – 3 tablespoons lemon juice
  2. 1 tablespoon olive oil
  3. 3 small tomatoes chopped
  4. ½ green pepper chopped
  5. 2 – 3 tablespoons parsley chopped
  6. 2 – 3 tablespoons scallions chopped (optional)
  7. Salt to taste
Instructions
  1. Wash the orange lentils at least once.
  2. In a 4 or 5 quart saucepan, place the lentils with the water and salt.
  3. Cover and bring the mixture to a boil, and then lower heat. Leave the lid slightly open and cook for about 1 hour until all the liquid is absorbed.
  4. Once the liquid is absorbed, turn the heat off.
  5. Gently add the bulgur, butter and the seasoning
  6. Mix together gently, cover the saucepan with the lid and leave to cool completely.
  7. Chop the onion.
  8. In a small sauté pan, with 3 tablespoon vegetable oil, add the chopped onion and fry until lightly golden. Leave to cool.
  9. Put 1 cup cold water in a separate bowl.
  10. In a large tray, add the cooled onion, to the lentil and gently mix together.
  11. Using a little water at a time, knead the lentil bulgur mixture, until it gets soft like cookie dough consistency. You will not use all the cold water. Only about 3 tablespoons of it.
  12. Grab a small amount and form into keufte shapes.
  13. Prepare the salad, serve over or alongside the keufte’s.
  14. Serve immediately
♣ Notes
  1. 1. Note: Do not stir during cooking, because the mixture will stick to the pan.
  2. 2. Note: The water should be exactly 3 cups, otherwise if it’s too much it will be soggy and the keufte’s won’t form.
  3. 3. Note: The dressing for the salad shouldn’t be as much as a regular salad dressing.
